Cleaning Checklist for Your Restaurant

The key to happy customers and health inspectors: a cleaning checklist. A cleaning checklist is a simple and effective way to make sure all of the cleaning your business needs gets completed and can be easily maintained.

Some necessary tasks can become neglected or forgotten, which can negatively affect the atmosphere of your business and the integrity of your food. With the use of a cleaning checklist, you can assign specific employees specific tasks and can follow up with them easily to help improve the quality of their work.

Back of house:

After-use:

  • Disinfect prep table between tasks
  • Change out cutting boards between tasks
  • Wash and scrub dishes
  • Wipe down the grill between cooking red meat, poultry, and fish
  • Changing sanitizing water and rags frequently
  • Emptying trash when full

Daily:

  • Wash beverage heads of soda fountain
  • Mop floors
  • Wash can opener
  • Scrub and wipe down grill, fryer and range.
  • Disinfect prep surfaces
  • Clean out grease traps
  • Run hood filters through dish washer
  • Clean drains and use drain cleaner
  • Wipe down the bar, including all the bottles and spouts

  • Empty and sanitize ice machine
  • Wipe down all shelves and storage areas

Front of house:

  • Wiping down tables between customers
  • Emptying trash when full
  • Cleaning condiment bottles and shakers when dirty

Daily:

  • Mop floors, vacuum and spot treat carpet
  • Wipe down door handles and railings
  • Sweep and wash patio area
  • Wipe down tables and counters
  • Disinfect toilets
  • Take out trash and feminine hygiene bags
  • Wipe down and sanitize sinks, toilet paper dispensers, automatic dryers
  • Restock restrooms
  • Shake out floor mats
  • Restock any condiment areas and drink stations

Weekly:

  • Dust décor, blinds and light fixtures
  • Wash smudged and dirty windows
  • Clean chairs and chair legs
  • Clean drains and use drain cleaner
  • Wipe down baseboards
  • Wipe down walls
  • Check under tables for gum or any sticky substances
  • Clean menus

Monthly:

  • Check ceiling and corners for cobwebs
  • Clean floor mats
  • Clean the air vents
